I like the Danish guy, Gus Hansen. http://en.wikipedia.org/wiki/Gus_Hansen

He carries a tape recorder with him and during live games he stores notes as he goes along. Sometimes it's notes on players and sometimes it's notes on how he played. He seems like he really has his head screwed on and is entertaining. He plays for Full Tilt Poker as far as I know.
